The first vintage was crafted in partnership with two-star chef Jean-Luc Rabanel. It boasts a fresh, delectable style that creates subtle harmony between the chef’s compositions, in which vegetables play a starring role, and Fortant’s floral, airy wines.
The “Gaïa” cuvées derive their name from the Mother Earth goddess, protector of life who fertilized the land. Growing methods respect the specifications of organic agriculture and privilege the principles of agro-ecology (the study, design and management of sustainable food production systems).
This range of wines was conceived of through the study of flavour palettes and taste sensations within vegetable-based cuisine that allowed us to define food-wine pairings.
